Something different for salmon. Makes 4 servings Prep: 10 minutes Roast: 15 minutes

What You Need to Make this Recipe

1/4 cup hoisin sauce 2 Tbls reduced-sodium soy sauce 2 tsp rice vinegar 1/2 tsp ground giner 1/4 tsp red pepper flakes 4 pieces of salmon fillet, about 6 oz each 2 scallions, trimmed and thinly sliced

Cooking Instructions

Step1-Heat oven to 450º. Coat a baking dish with nonstick cooking spray.

Step2-In a small dish, stir together the hoisin, soy sauce, vinegar, ginger and red pepper flakes. Place salmon in prepared dish and spread top of each fillet with half of the hoisin mixture.

Step3-Roast at 450º for 10 minutes. Spread remaining hoisin mixture over the salmon and top with the scallions. Roast for an additional 5 minutes.

Tips and Warnings

Use a paring knife to check for doneness-insert in center of fillet to peek inside. Fish should look opaque and flaky but still be juicy.

Serve with rice and broccoli, and lemon wedges for garnish, if desired. Make sure no one with fish allergies eats this. Per serving: 308 calories, 12g fat (2g sat), 39g protein, 8g carbohydrate, 0g fiber, 795mg sodium, 107mg cholesterol.
